Since we've been house-sitting for a number of years, I'd like to add a couple of comments to your checklist.
There is a lot of information for the house-sitters to absorb and remember about your pets and home, so the more detailed, the better, in the instructions. There are a few things that we've found to be important to us, that you didn't mention:
1) Help the housesitters log-in to your computer network and have the password written down, so they can also log-in with their phones or tablets.
2) It's helpful to be able to use the homeowners' printer and show them where the extra paper is located. We probably don't print more than 10-15 pages, but sometimes you need a printer.
3) Our biggest hang-up is always the TV and using their remote. We need written instructions please! Everybody's remote is different. Light touch or hold it down for 3 seconds are not obvious unless you use it everyday.
